Barbecues and hog roasts are good business for pubs and restaurants in the summer months. Pork is not only the most versatile meat to barbecue but also the most profitable, especially if cooked as larger cuts. We wanted to make sure that our client’s product was foremost in the caterer’s mind, so suggested this little book to inspire them. We commissioned a butcher and a chef to create the recipes, photographed it all in a day, wrote and designed a book that was ready to print in a week. Quick work, which meant that the first thing that caterers thought about that barbecue season was pork.
